Method
- 1Melt butter in small saucepan over medium-low heat
- 2Add flour
- 3Stir 2 minutes
- 4Gradually whisk in 1 1 / 2 cups milk
- 5Increase heat to high
- 6Bring to boil , then reduce heat to medium and simmer until mixture is thickened , stirring constantly , about 4 minutes
- 7Remove from heat
- 8Add cheese , stir until melted
- 9Season with salt and pepper
- 10Do ahead: this cheese sauce can be made 2 hours ahead
